This is not always true.  My NWT packed fine with drop bars in the smallest
suitcase (Oyster 29").  I used a stem with a removable faceplate.  I'm 
using the same setup for packing my Tikit.

If you have a Bike Friday custom stem then you need the splitable handlebars
because their custom stems don't have removable faceplates.

The same brake levers are used for STI bars and drop bars.  Are you
sure that you don't have H-bars?  H-bars use MTB shifters and brake
levers, STI bars use road (or MTB?) shifters and road brake levers.

You could use a front derailleur instead of the DualDrive.
